Ingredients

  • 1 lb salmon fillet (450 g)
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon lemon juice (5 ml)
  • 1 teaspoon garlic powder (5 g)
  • 1 teaspoon onion powder (5 g)
  • 1 teaspoon dried dill (2 g)
  • 1/2 teaspoon salt (2.5 g)
  • 1/4 teaspoon black pepper (1 g)
  • 1 cup fresh spinach, chopped (30 g)
  • 1/2 cup cherry tomatoes, halved (75 g)
  • 1/4 cup crumbled cheese (35 g)
  • 1 tablespoon fresh parsley, chopped (4 g)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease a muffin tin with olive oil.
  3. Cut the salmon fillet into pieces that can fit into a muffin tin cup.
  4. In a small bowl, mix olive oil, lemon juice, garlic powder, onion powder, dill, salt, and pepper.
  5. Brush the salmon pieces with the olive oil mixture.
  6. Place a layer of chopped spinach in the bottom of each muffin tin cup.
  7. Add a piece of seasoned salmon on top of the spinach in each cup.
  8. Top the salmon with halved cherry tomatoes.
  9. Sprinkle crumbled feta cheese over the tomatoes.
  10. Bake for 20-25 minutes, or until the salmon is cooked through.
  11. Remove from the oven and let cool slightly.
  12. Garnish with chopped fresh parsley before serving.
