Ingredients

  • – 2 pounds (900g) salmon, sliced into four filets
  • – salt and pepper
  • – 1/4 cup (60ml) miso paste
  • – 2 Tablespoons (30 ml) soy sauce
  • – 1 Tablespoon (15 ml) brown sugar
  • – 1 Tablespoon (15 ml) rice vinegar
  • – 1 teaspoon (5 ml) sesame oil
  • – chopped green onions and sesame seeds for garnish


Instructions

  1. Season the salmon filets with salt and pepper.
  2. Combine the miso paste, soy sauce, brown sugar, rice vinegar, and sesame oil in a small bowl, stirring until the mixture is uniform. Save one tablespoon of this mixture.
  3. Place the salmon in a medium bowl and pour the sauce over it. Allow the salmon to soak in the marinade for 1-3 hours.
  4. Heat the oven to 375 degrees Fahrenheit. Place the salmon in a large skillet and discard the marinade. Cook in the oven for 12-15 minutes, or until the fish is nearly cooked through and turns opaque.
  5. Apply the reserved glaze and set the oven to broil on high for 1-2 minutes until the internal temperature of the fish reaches 125-130 degrees Fahrenheit.
  6. Sprinkle with chopped green onions and sesame seeds as a garnish, if desired.
