- 2 tablespoons (30 ml) miso paste (30 grams)
- 1 tablespoon (15 ml) soy sauce (15 milliliters)
- 1 tablespoon (15 ml) honey (15 milliliters)
- 1 tablespoon (15 ml) sesame oil (15 milliliters)
- 1 tablespoon (15 ml) rice vinegar (15 milliliters)
- 2 teaspoons (10 ml) fresh ginger, grated (about 10 grams)
- 2 cloves garlic, minced
- 1 tablespoon (15 ml) vegetable oil (15 milliliters)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine miso paste, soy sauce, honey, sesame oil, rice vinegar, grated ginger, and minced garlic.
- Mix the ingredients until smooth and well-combined.
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Brush the miso mixture evenly over the salmon fillets.
- Toss the sliced red bell pepper, yellow bell pepper, and zucchini with vegetable oil in a separate bowl.
- Season the vegetables with salt and black pepper to taste.
- Arrange the seasoned vegetables around the salmon on the baking sheet.
- Bake in the preheated oven for 15-20 minutes, until the salmon is cooked through and flakes easily with a fork.
