  • 2 tablespoons (30 ml) miso paste (30 grams)

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine miso paste, soy sauce, honey, sesame oil, rice vinegar, grated ginger, and minced garlic.
  3. Mix the ingredients until smooth and well-combined.
  4. Place the salmon fillets on a baking sheet lined with parchment paper.
  5. Brush the miso mixture evenly over the salmon fillets.
  6. Toss the sliced red bell pepper, yellow bell pepper, and zucchini with vegetable oil in a separate bowl.
  7. Season the vegetables with salt and black pepper to taste.
  8. Arrange the seasoned vegetables around the salmon on the baking sheet.
  9. Bake in the preheated oven for 15-20 minutes, until the salmon is cooked through and flakes easily with a fork.
  10. Remove from the oven and let rest for a few minutes before serving.

Notes

  • Evenly coat the salmon fillets with the miso mixture for optimal flavor infusion.
  • Avoid overcrowding the baking sheet to allow vegetables to roast and caramelize properly.
  • Customize the seasoning of the vegetables before baking for a personal touch.
