Description

A vibrant dish combining sweet corn and succulent shrimp in a creamy feta sauce with a zing of lime.


Ingredients

  • 1 lb shrimp (fresh or frozen)
  • 2 cups fresh or frozen corn
  • 1 cup feta cheese, crumbled
  • 1/2 cup cream or sour cream
  • 2 tbsp lime juice
  • 1/4 cup cilantro, chopped
  • 1 tsp chili powder
  • 2 cloves garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 2 tbsp butter or oil


Instructions

  1. In a large pan, heat butter or oil over medium heat.
  2. Add shrimp and cook until pink and opaque, about 3-4 minutes. Remove shrimp and set aside.
  3. In the same pan, add corn and sauté for 5 minutes.
  4. Stir in garlic, chili powder, salt, and pepper, cooking until fragrant.
  5. Reduce heat and add cream, feta cheese, and lime juice, stirring until well combined.
  6. Return shrimp to the pan, mix well, and garnish with chopped cilantro.
  7. Serve warm, with rice, beans, or tortillas if desired.

Notes

Adjust chili powder based on your spice tolerance and serve with fresh lime juice for brightness.
