Ingredients
- 1 lb shrimp
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1 avocado, diced
- 1 cup corn
- 1 cup black beans
- 1 cup rice or quinoa
- 1/4 cup fresh cilantro, chopped
Instructions
- In a bowl, toss the shrimp with olive oil, lime juice, garlic powder, chili powder, cumin, salt, and black pepper.
- Heat a pan over medium-high heat and cook the shrimp for about 2-3 minutes on each side, until pink and opaque.
- Prepare the rice or quinoa according to package instructions.
- In a serving bowl, layer rice or quinoa, topped with cooked shrimp, corn, black beans, diced avocado, and chopped cilantro.
