Description

A vibrant and flavorful Mexican shrimp bowl featuring seasoned shrimp, fresh vegetables, and zesty lime.


Ingredients

  • 1 lb shrimp
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 avocado, diced
  • 1 cup corn
  • 1 cup black beans
  • 1 cup rice or quinoa
  • 1/4 cup fresh cilantro, chopped


Instructions

  1. In a bowl, toss the shrimp with olive oil, lime juice, garlic powder, chili powder, cumin, salt, and black pepper.
  2. Heat a pan over medium-high heat and cook the shrimp for about 2-3 minutes on each side, until pink and opaque.
