Ingredients
- 2 cups fresh fish fillets (such as tilapia or snapper), diced
- 1 cup fresh lime juice
- 1/2 cup red onion, finely chopped
- 1 cup tomatoes, diced
- 1/2 cup cucumber, diced
- 1/4 cup cilantro, chopped
- 1-2 jalapeños, seeded and minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced fish and lime juice, making sure the fish is fully submerged. Cover and refrigerate for about 30 minutes, or until the fish is opaque and ‘cooked’ by the citrus.
- Add the red onion, tomatoes, cucumber, cilantro, and jalapeños to the fish.
- Season with salt and pepper to taste and mix well.
- Serve chilled as an appetizer, with tortilla chips or on its own.
