A delicious Mediterranean dish combining shrimp, feta, and sun-dried tomatoes, perfect for any occasion.
Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup sun-dried tomatoes, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/2 cup feta cheese, crumbled
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Add the shrimp and cook until pink and opaque, about 3-5 minutes.
- Stir in the sun-dried tomatoes, oregano, basil, salt, and pepper.
- Cook for an additional 2-3 minutes.
- Remove from heat and sprinkle crumbled feta cheese on top.
- Garnish with fresh parsley before serving.
Notes
Add a squeeze of lemon juice for brightness or toss in spinach for added nutrients.
