Description

A quick and flavorful Mediterranean shrimp dish with sun-dried tomatoes, fresh herbs, and crumbled feta cheese.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup fresh herbs (such as parsley and basil), chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup feta cheese, crumbled
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes.
  4. Stir in the sun-dried tomatoes and chopped herbs, cooking for an additional 2 minutes.
  5. Season with salt and pepper to taste.
  6. Top with crumbled feta cheese before serving.

Notes

For a spicy kick, add red pepper flakes. Pair with crusty bread to soak up the flavors.
