A delightful seafood dish that combines tender salmon fillets with zesty lemon orzo for a refreshing taste of the Mediterranean.
Ingredients
- 2 salmon fillets
- 1 cup orzo pasta
- 2 cups vegetable broth or water
- 1 lemon, zested and juiced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a skillet, heat the olive oil over medium-high heat. Season the salmon fillets with garlic powder, salt, and pepper.
- Place the salmon in the skillet and sear for about 4-5 minutes on each side, or until cooked to your liking. Remove from the skillet and set aside.
- In the same skillet, add the vegetable broth or water and bring to a boil. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes.
- Once the orzo is cooked, stir in the lemon juice and zest.
- Serve the salmon atop a bed of lemon orzo and garnish with fresh parsley.
Notes
For a creamier texture, consider adding Greek yogurt or heavy cream to the orzo. Pair with a simple cucumber salad or roasted vegetables.
