Description

A delightful seafood dish that combines tender salmon fillets with zesty lemon orzo for a refreshing taste of the Mediterranean.


Ingredients

  • 2 salmon fillets
  • 1 cup orzo pasta
  • 2 cups vegetable broth or water
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a skillet, heat the olive oil over medium-high heat. Season the salmon fillets with garlic powder, salt, and pepper.
  2. Place the salmon in the skillet and sear for about 4-5 minutes on each side, or until cooked to your liking. Remove from the skillet and set aside.
  3. In the same skillet, add the vegetable broth or water and bring to a boil. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes.
  4. Once the orzo is cooked, stir in the lemon juice and zest.
  5. Serve the salmon atop a bed of lemon orzo and garnish with fresh parsley.
