Description

A flavorful Mediterranean dish featuring seared salmon on a bed of lemon-infused orzo pasta, celebrating fresh ingredients and vibrant flavors.


Ingredients

  • 2 salmon fillets
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)


Instructions

  1. In a skillet, heat olive oil over medium heat. Season the salmon fillets with salt and pepper, then sear them for about 4-5 minutes on each side until cooked through. Remove the salmon from the skillet and set aside.
  2. In the same skillet, add minced garlic and sauté for 1 minute. Add orzo and toast for another minute.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and let it simmer for about 10 minutes or until the orzo is cooked and has absorbed most of the liquid.
  4. Stir in lemon zest and lemon juice. Adjust seasoning if necessary.
  5. Serve the orzo topped with the seared salmon and garnish with fresh parsley.
