Description

A delightful Mediterranean dish featuring seared salmon served over lemon-infused orzo pasta, complemented by cherry tomatoes and fresh spinach.


Ingredients

  • 2 salmon fillets
  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 lemon (zested and juiced)
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes (halved)
  • 1 cup spinach
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a skillet, heat olive oil over medium heat. Season the salmon fillets with salt and pepper. Add the salmon to the skillet and sear for 4-5 minutes on each side or until cooked to your liking. Remove and set aside.
  2. In the same skillet, add orzo and toast for 1-2 minutes. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 8-10 minutes or until the orzo is al dente.
  3. Stir in lemon zest, lemon juice, cherry tomatoes, and spinach. Cook until the spinach is wilted.
  4. Serve the orzo topped with the seared salmon and garnish with fresh parsley.

Notes

For a kick, consider adding minced garlic when toasting the orzo or red pepper flakes for some heat.
