A delightful Mediterranean dish featuring seared salmon served over lemon-infused orzo pasta, complemented by cherry tomatoes and fresh spinach.
Ingredients
- 2 salmon fillets
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 lemon (zested and juiced)
- 2 cups vegetable broth
- 1 cup cherry tomatoes (halved)
- 1 cup spinach
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a skillet, heat olive oil over medium heat. Season the salmon fillets with salt and pepper. Add the salmon to the skillet and sear for 4-5 minutes on each side or until cooked to your liking. Remove and set aside.
- In the same skillet, add orzo and toast for 1-2 minutes. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 8-10 minutes or until the orzo is al dente.
- Stir in lemon zest, lemon juice, cherry tomatoes, and spinach. Cook until the spinach is wilted.
- Serve the orzo topped with the seared salmon and garnish with fresh parsley.
Notes
For a kick, consider adding minced garlic when toasting the orzo or red pepper flakes for some heat.
