Description

A hearty and quick Mediterranean fish stew featuring flaky white fish, tender potatoes, and vibrant vegetables, all cooked to perfection in just 30 minutes.


Ingredients

  • 2 tbsp butter
  • 2 tbsp extra virgin olive oil
  • 1 onion, chopped
  • 1 carrot, sliced into thin rounds
  • 1 tbsp flour
  • 3 medium potatoes, peeled and cut into bite-sized cubes
  • 1 pound white fish (cod, halibut, or haddock), boneless
  • 4 cups low-sodium chicken broth
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste


Instructions

  1. Heat butter and olive oil in a thick-bottomed pot over medium heat. Sauté onions and carrots until soft, about 3 minutes.
  2. Stir in flour, then add the cubed potatoes, cooking for an additional minute.
  3. Pour in the chicken broth, bringing the mixture to a boil.
  4. Add the fish and smoked paprika, then cover the pot. Allow it to simmer, stirring occasionally, until the potatoes are soft, approximately 15-20 minutes.

Notes

For added flavor, consider garnishing with fresh herbs or a sprinkle of smoked paprika before serving. Serve with crusty bread or over rice.
