Ingredients

  • 1 ½ lb (680 g) white fish fillet such as cod or halibut, (1 to 1 ½ in thickness)
  • Kosher salt and ground black pepper
  • Extra virgin olive oil
  • 1 lemon
  • 8 ounces (227 g) cherry tomatoes, halved
  • 3 ounces (85 g) pitted olives, halved (I used a combination of kalamata olives and green olives)
  • 1 shallot, minced
  • 4 to 5 garlic cloves, minced
  • 1 tablespoon (15 ml) fresh thyme leaves
  • 2 teaspoons (10 ml) dried oregano


Instructions

  1. Preheat your oven to 400 degrees F.
  2. Dry the fish thoroughly and sprinkle both sides with salt and pepper. Lightly coat a 9 ½ x 13-inch baking dish with extra virgin olive oil, then spread half of the cherry tomato halves across the bottom. Lay the fish on top. Drizzle juice from half a lemon evenly over the fish.
  3. In a medium-sized bowl, mix together the remaining tomatoes, olives, minced shallot, garlic, thyme, and oregano. Season with a tiny pinch of salt and pepper. Add a generous amount of extra virgin olive oil (around 3 tablespoons) and stir until everything is well-coated.
  4. Spread the mixture of tomatoes and olives over the fish.
  5. Place in the preheated oven and bake for 15 to 20 minutes, adjusting time based on the fish’s thickness.
  6. Once done, take it out of the oven and squeeze the juice from the remaining half of the lemon over the top.

Notes

  • For a vibrant presentation, use a variety of colorful cherry tomatoes.
  • Evenly spread the tomato and olive mixture on the fish for a flavorful bite every time.
  • Add parsley or basil for a fresh touch, and avoid overcooking the fish to keep it moist.
