A simple yet flavorful dish featuring white fish baked with cherry tomatoes, garlic, and fresh herbs, capturing the essence of Mediterranean cuisine.
Ingredients
- 4 white fish fillets (cod, halibut, or similar)
- 2 cups cherry tomatoes
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- Juice of 1 lemon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 teaspoon dried oregano
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh basil, torn
Instructions
- Preheat your oven to 400°F (200°C) and coat your baking dish lightly with oil.
- Pat the fish fillets dry with a paper towel.
- In your prepared baking dish, combine the cherry tomatoes, 2 tablespoons olive oil, minced garlic, salt, black pepper, red pepper flakes, and dried oregano. Toss well to ensure even coating.
- Spread the mixture evenly across the dish.
- Nestle the fish fillets within the tomato mixture, drizzle with remaining olive oil, and squeeze lemon juice on top.
- Bake in the preheated oven for 15–18 minutes until the fish flakes easily with a fork and tomatoes blister.
- Remove from the oven and sprinkle fresh parsley and basil on top.
- Serve immediately with crusty bread, rice, or a salad.
Notes
For added depth, include other vegetables like bell peppers or zucchini. Adjust crushed red pepper flakes to taste for more heat.
