Description

A simple yet flavorful dish featuring white fish baked with cherry tomatoes, garlic, and fresh herbs, capturing the essence of Mediterranean cuisine.


Ingredients

  • 4 white fish fillets (cod, halibut, or similar)
  • 2 cups cherry tomatoes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, torn


Instructions

  1. Preheat your oven to 400°F (200°C) and coat your baking dish lightly with oil.
  2. Pat the fish fillets dry with a paper towel.
  3. In your prepared baking dish, combine the cherry tomatoes, 2 tablespoons olive oil, minced garlic, salt, black pepper, red pepper flakes, and dried oregano. Toss well to ensure even coating.
  4. Spread the mixture evenly across the dish.
  5. Nestle the fish fillets within the tomato mixture, drizzle with remaining olive oil, and squeeze lemon juice on top.
  6. Bake in the preheated oven for 15–18 minutes until the fish flakes easily with a fork and tomatoes blister.
  7. Remove from the oven and sprinkle fresh parsley and basil on top.
  8. Serve immediately with crusty bread, rice, or a salad.

Notes

For added depth, include other vegetables like bell peppers or zucchini. Adjust crushed red pepper flakes to taste for more heat.
