Description

A flavorful and easy Mediterranean baked fish recipe featuring fresh herbs, juicy tomatoes, and briny olives, perfect for family meals.


Ingredients

  • 1/3 cup olive oil
  • 4 garlic cloves, sliced
  • 6 sprigs fresh thyme
  • 1 1/2 cup baby tomatoes, whole
  • 4 haddock fillets (or cod, sea bass, or tilapia)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon chili flakes (optional)
  • 1 cup Mezzetta olives, any variety
  • 1/4 cup Mezzetta sliced jalapeños
  • 2 teaspoons Mezzetta capers, drained


Instructions

  1. Preheat your oven to 450°F.
  2. Place your baking dish with the olive oil in the oven to heat for 6-8 minutes.
  3. While the dish preheats, season your fish fillets with salt, pepper, and chili flakes, if using.
  4. Carefully remove the hot dish from the oven and add in the sliced garlic, half of the thyme sprigs, and the whole baby tomatoes.
  5. Place the seasoned fish fillets in the baking dish, scattering the Mezzetta olives around the fish.
  6. Top the dish with sliced jalapeños and capers.
  7. Lower the oven temperature to 375°F, then bake for 15-18 minutes, depending on the size of your fillets.
  8. For a beautifully charred finish, broil the fish for an additional 2 minutes after baking.
  9. Drizzle the flavorful olive oil from the pan over the fish fillets and garnish with the remaining thyme sprigs.
  10. Serve immediately and enjoy!
