Description

A vibrant dish combining fresh fish with roasted vegetables, infused with garlic and herbs for a delightful Mediterranean flavor.

Ingredients

  • 2 fish fillets (such as cod or tilapia)
  • 2 cups mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, sliced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or basil) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the mixed vegetables in a large baking dish.
  3. Place the fish fillets on top of the vegetables.
  4. Drizzle with olive oil and sprinkle with minced garlic, oregano, salt, and pepper.
  5. Top with lemon slices.
  6. Bake for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  7. Garnish with fresh herbs before serving.

Notes

Experiment with different vegetables or spices to customize the dish. Keeping the skin on tilapia adds moisture and flavor while baking.
