Description

A delightful Mediterranean baked fish dish featuring flaky fish fillets with juicy tomatoes, briny olives, and aromatic herbs, perfect for family dinners.


Ingredients

  • 2 white fish fillets (such as cod or tilapia)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup olives, pitted and halved
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, combine the cherry tomatoes, olives, garlic, olive oil, oregano, basil, salt, and pepper.
  3. Place the fish fillets on top of the mixture in the baking dish.
  4. Bake for 15-20 minutes or until the fish is cooked through and flakes easily with a fork.
  5. Garnish with fresh parsley if desired, and serve immediately.

Notes

For a burst of freshness, add a splash of lemon juice before serving. You can also toast the olives lightly for enhanced flavor.
