Description

A flavorful dish featuring flaky white fish baked with fresh tomatoes, olives, and herbs, capturing the essence of Mediterranean cuisine.


Ingredients

  • 1 lb flaky white fish (cod or tilapia)
  • 2 medium tomatoes (diced or sliced)
  • 1/2 cup olives (black or green, pitted and sliced)
  • 3 cloves garlic (minced)
  • 1/4 cup fresh basil, oregano, or parsley (chopped)
  • 1/4 cup olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, place the flaky white fish.
  3. Add the diced tomatoes, olives, minced garlic, and herbs on top of the fish.
  4. Drizzle with olive oil and season with salt and pepper to taste.
