Ingredients
- 1 lb flaky white fish (cod or tilapia)
- 2 medium tomatoes (diced or sliced)
- 1/2 cup olives (black or green, pitted and sliced)
- 3 cloves garlic (minced)
- 1/4 cup fresh basil, oregano, or parsley (chopped)
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, place the flaky white fish.
- Add the diced tomatoes, olives, minced garlic, and herbs on top of the fish.
- Drizzle with olive oil and season with salt and pepper to taste.
- Bake in the preheated oven for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
