Description

A vibrant and flavorful seafood dish featuring flaky white fish baked with cherry tomatoes, olives, and garlic, transporting you to the Mediterranean coast.

Ingredients

  • 4 white fish fillets (such as cod or haddock)
  • 2 cups cherry tomatoes, halved
  • 1 cup olives, pitted and sliced
  • 3 cloves garlic, minced
  • 2 tablespoons fresh herbs (such as parsley or basil), chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 lemon, sliced (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In your prepared baking dish, place the fish fillets evenly apart.
  3. Season the fillets generously with salt and pepper.
  4. In a separate bowl, combine the halved cherry tomatoes, sliced olives, minced garlic, chopped herbs, and olive oil. Mix thoroughly to coat the vegetables.
  5. Pour this mixture over the seasoned fish, allowing it to rest deeper into the fillets.
  6. Arrange lemon slices attractively on top of the mixture.
  7. Bake the dish for 20-25 minutes or until the fish turns pearlescent and flakes easily with a fork.
  8. Serve warm and enjoy the bright, refreshing flavors of the Mediterranean.

Notes

For extra flavor, consider marinating the fish and vegetables for 30 minutes before baking. Rotate the dish mid-bake for even cooking.
