Ingredients

  • 2 pounds (907 g) cod fillets (900 grams)
  • 2 tablespoons (30 ml) olive oil (30 milliliters)
  • 1 teaspoon (5 ml) salt (5 grams)
  • 1/2 teaspoon (3 ml) black pepper (1.5 grams)
  • 1 teaspoon (5 ml) dried oregano (1 gram)
  • 1 teaspoon (5 ml) dried thyme (1 gram)
  • 2 cloves garlic, minced
  • 1 cup (240 ml) cherry tomatoes, halved (150 grams)
  • 1/2 cup (120 ml) black olives, pitted and sliced (75 grams)
  • 1 lemon, sliced
  • 1/4 cup (60 ml) fresh parsley, chopped (15 grams)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the cod fillets dry with paper towels.
  3. Place the cod fillets in a single layer in a baking dish.
  4. Drizzle 2 tablespoons of olive oil over the cod fillets.
  5. Sprinkle 1 teaspoon of salt and 1/2 teaspoon of black pepper evenly over the fillets.
  6. Add 1 teaspoon each of dried oregano and dried thyme on the fillets.
  7. Spread 2 minced garlic cloves over the cod.
  8. Arrange 1 cup of halved cherry tomatoes around the fillets.
  9. Scatter 1/2 cup of sliced Kalamata olives over the dish.
  10. Arrange slices of 1 lemon on top of the cod and tomatoes.
  11. Bake in the preheated oven for 20-25 minutes, until the cod is cooked through and flakes easily.
  12. Remove the dish from the oven and let it rest for a few minutes.
  13. Sprinkle 1/4 cup of chopped fresh parsley over the baked cod before serving.
