Ingredients
- 2 pounds (907 g) cod fillets (900 grams)
- 2 tablespoons (30 ml) olive oil (30 milliliters)
- 1 teaspoon (5 ml) salt (5 grams)
- 1/2 teaspoon (3 ml) black pepper (1.5 grams)
- 1 teaspoon (5 ml) dried oregano (1 gram)
- 1 teaspoon (5 ml) dried thyme (1 gram)
- 2 cloves garlic, minced
- 1 cup (240 ml) cherry tomatoes, halved (150 grams)
- 1/2 cup (120 ml) black olives, pitted and sliced (75 grams)
- 1 lemon, sliced
- 1/4 cup (60 ml) fresh parsley, chopped (15 grams)
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the cod fillets dry with paper towels.
- Place the cod fillets in a single layer in a baking dish.
- Drizzle 2 tablespoons of olive oil over the cod fillets.
- Sprinkle 1 teaspoon of salt and 1/2 teaspoon of black pepper evenly over the fillets.
- Add 1 teaspoon each of dried oregano and dried thyme on the fillets.
- Spread 2 minced garlic cloves over the cod.
- Arrange 1 cup of halved cherry tomatoes around the fillets.
- Scatter 1/2 cup of sliced Kalamata olives over the dish.
- Arrange slices of 1 lemon on top of the cod and tomatoes.
- Bake in the preheated oven for 20-25 minutes, until the cod is cooked through and flakes easily.
- Remove the dish from the oven and let it rest for a few minutes.
- Sprinkle 1/4 cup of chopped fresh parsley over the baked cod before serving.
