Ingredients
- – 1 ½ pounds (680 g) cod fillet
- – 1 small red onion OR large shallot, sliced
- – 3 cloves garlic, crushed
- – 1 pound (454 g) cherry tomatoes, halved
- – ¼ cup (60 ml) sliced black olives
- – 1 tablespoon (15 ml) olive oil
- – 1 teaspoon (5 ml) Italian seasoning
- – salt & pepper to taste
- – ¼ cup (60 ml) water
- – 4 tablespoons (57 g) vegetable oil, chopped
Instructions
- Prepare by setting your oven to 400°F and lightly coating a rectangular baking dish that fits your cod and tomatoes snugly. Place the cod fillet in the dish.
- Distribute the sliced onion or shallot, crushed garlic, halved cherry tomatoes, and black olives around the fish.
- Pour olive oil over everything in the dish. Add a sprinkle of Italian seasoning, along with salt and pepper to taste.
- Add water to the dish and evenly distribute the vegetable oil over the top. Cook in the oven for 15-20 minutes, or until the cod and tomatoes are fully cooked.
