Ingredients

  • – 1 ½ pounds (680 g) cod fillet
  • – 1 small red onion OR large shallot, sliced
  • – 3 cloves garlic, crushed
  • – 1 pound (454 g) cherry tomatoes, halved
  • – ¼ cup (60 ml) sliced black olives
  • – 1 tablespoon (15 ml) olive oil
  • – 1 teaspoon (5 ml) Italian seasoning
  • – salt & pepper to taste
  • – ¼ cup (60 ml) water
  • – 4 tablespoons (57 g) vegetable oil, chopped


Instructions

  1. Prepare by setting your oven to 400°F and lightly coating a rectangular baking dish that fits your cod and tomatoes snugly. Place the cod fillet in the dish.
  2. Distribute the sliced onion or shallot, crushed garlic, halved cherry tomatoes, and black olives around the fish.
  3. Pour olive oil over everything in the dish. Add a sprinkle of Italian seasoning, along with salt and pepper to taste.
  4. Add water to the dish and evenly distribute the vegetable oil over the top. Cook in the oven for 15-20 minutes, or until the cod and tomatoes are fully cooked.
