Description

These Maui-inspired egg rolls offer a vibrant fusion of flavors, combining cooked chicken or shrimp, tangy pineapple, and fresh vegetables in a crispy wrapper.


Ingredients

  • Egg roll wrappers or wonton wrappers
  • Cooked chicken or shrimp
  • Pineapple chunks
  • Bell peppers
  • Carrots
  • Green onions
  • Soy sauce
  • Sesame oil
  • Ginger (fresh or ground)
  • Garlic (minced)
  • Vegetable oil (for frying)


Instructions

  1. In a skillet, heat sesame oil over medium heat. Add garlic and ginger, sautéing until fragrant.
  2. Add chicken or shrimp, bell peppers, carrots, and pineapple. Stir in soy sauce and cook until heated through.
  3. Lay an egg roll wrapper on a flat surface with a corner pointed towards you. Place a spoonful of the filling in the center.
  4. Fold the bottom corner over the filling, then fold in the sides and roll up tightly.
