Description

A delightful and savory salmon dish featuring creamy cheese, fresh spinach, and flavorful sun-dried tomatoes, perfect for special occasions.

Ingredients

  • 4 salmon filets
  • 1 tablespoon olive oil
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1/2 cup cream cheese
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon minced garlic
  • 1 teaspoon dried herbs (like thyme or oregano)
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the salmon filets with salt and pepper, then sear them in the skillet for about 4-5 minutes on each side until cooked through.
  3. Remove the salmon from the skillet and set aside.
  4. In the same skillet, add the minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  5. Stir in the cream cheese, parmesan cheese, and fresh spinach. Cook until the spinach wilts and the sauce becomes creamy.
  6. Return the salmon to the skillet, allowing the sauce to coat each filet.
  7. Serve warm alongside your favorite sides.

Notes

For extra flavor, consider garnishing with fresh herbs or lemon zest before serving.
