Description

A refreshing and vibrant shrimp dish, perfect for summer picnics, combining fresh ingredients like dill, lemons, and shallots in a zesty marinade.


Ingredients

  • 2 shallots, thinly sliced
  • 2 lemons, thinly sliced
  • 1 clove garlic, minced
  • 1 cup champagne vinegar
  • ½ cup extra virgin olive oil
  • ¼ cup fresh dill, chopped
  • 6 bay leaves
  • 2 tablespoons celery seed
  • 1 tablespoon granulated sugar
  • 2 teaspoons crushed red pepper
  • 1 teaspoon salt
  • 1 pound large shrimp, peeled and deveined, cooked (tails left on)


Instructions

  1. In a large jar, combine the sliced shallots, lemons, and minced garlic.
  2. Add the champagne vinegar, extra virgin olive oil, chopped dill, bay leaves, celery seed, granulated sugar, crushed red pepper, and salt.
  3. Gently mix the ingredients to incorporate all flavors.
  4. Finally, add the cooked shrimp, making sure they are well-coated.
  5. Seal the jar and refrigerate for at least 8 hours before serving.
