Ingredients
- Four 170g (6 oz) skinless salmon fillets
- 3 medium zucchinis, cut into 1-inch rounds
- 3 tablespoons (45 ml) vegetable oil
- 1/4 cup (60 ml) soy sauce
- 1/4 cup (60 ml) maple syrup
- 3 tablespoons (45 ml) grated fresh ginger
- 3 tablespoons (45 ml) rice vinegar
- 2 tablespoons (30 ml) sriracha
- 1 teaspoon (5 ml) cornstarch
- 4 cloves garlic, grated
- 3 green onions, sliced, whites and greens separated
- Cooked rice, for serving
Instructions
- Preheat the oven to broil and adjust the oven rack to the upper third position.
- Place the salmon fillets, with the flesh side facing up, on one side of a large baking dish, and arrange the zucchini rounds on the other side. Drizzle both the salmon and zucchini with vegetable oil.
- In a small bowl, combine soy sauce, maple syrup, fresh ginger, rice vinegar, sriracha, cornstarch, grated garlic, and the white parts of the green onions. Whisk together until well blended. Pour this mixture over the salmon and zucchini. Place the baking dish under the broiler and cook for 7 minutes.
- Take the dish out of the oven and spoon some sauce over the salmon while turning the zucchini pieces over. Return the dish to the broiler and continue cooking until the salmon is fully cooked and the sauce has thickened, approximately another 6 to 7 minutes.
- Spread the cooked rice on a large serving platter, then arrange the salmon on top. Add the zucchini to the platter as well. Drizzle the remaining sauce from the baking dish over everything. Sprinkle with the reserved green parts of the green onions before serving.
Notes
- For a more intense ginger flavor, grate fresh ginger directly onto the salmon before adding the sauce.
- Add a hint of sweetness by sprinkling brown sugar on the zucchini rounds before drizzling with vegetable oil.
- Enhance the dish’s presentation by garnishing with sesame seeds or chopped cilantro before serving.
