Ingredients

  • Jumbo pasta shells, 12 ounces (340 g) (340 grams)
  • Lobster meat, 1 pound (454 g) (450 grams)
  • Beef ricotta cheese, 1 cup (240 ml) (240 grams)
  • Beef mozzarella cheese, shredded, 1 cup (240 ml) (120 grams)
  • Parmesan cheese, grated, 1/2 cup (120 ml) (50 grams)
  • Garlic, minced, 2 cloves
  • Lemon juice, 1 tablespoon (15 ml) (15 milliliters)
  • Fresh parsley, chopped, 2 tablespoons (30 ml) (8 grams)
  • Salt, 1/2 teaspoon (3 ml) (2.5 grams)
  • Black pepper, 1/4 teaspoon (1 ml) (1.25 grams)
  • Olive oil, 2 tablespoons (30 ml) (30 milliliters)
  • Tomato sauce, 2 cups (480 ml) (480 milliliters)
  • Heavy cream, 1/2 cup (120 ml) (120 milliliters)
  • Butter, 2 tablespoons (30 ml) (28 grams)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to the package instructions until al dente. Drain and set aside.
  3. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  4. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  5. Add lobster meat to the skillet and cook for 3-4 minutes until opaque. Remove from heat.
  6. In a large bowl, combine lobster meat, ricotta cheese, 1/2 cup mozzarella cheese, lemon juice, fresh parsley, salt, and black pepper. Mix well.
  7. Carefully stuff each cooked pasta shell with the lobster and ricotta mixture. Set aside.
  8. In a saucepan, heat 1 tablespoon of olive oil over medium heat.
  9. Add butter to the saucepan and let it melt.
  10. Pour in the tomato sauce and heavy cream, stirring to combine.
  11. Simmer the sauce for 5 minutes until slightly thickened.
  12. Spread a thin layer of sauce on the bottom of a baking dish.
  13. Arrange the stuffed shells in the baking dish.
  14. Pour the remaining sauce over the stuffed shells.
  15. Sprinkle the remaining 1/2 cup mozzarella cheese and Parmesan cheese over the top.
  16. Cover the baking dish with aluminum foil.
  17. Bake in the preheated oven for 25 minutes.
  18. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  19. Let the dish rest for a few minutes before serving.
