Ingredients
- Jumbo pasta shells, 12 ounces (340 g) (340 grams)
- Lobster meat, 1 pound (454 g) (450 grams)
- Beef ricotta cheese, 1 cup (240 ml) (240 grams)
- Beef mozzarella cheese, shredded, 1 cup (240 ml) (120 grams)
- Parmesan cheese, grated, 1/2 cup (120 ml) (50 grams)
- Garlic, minced, 2 cloves
- Lemon juice, 1 tablespoon (15 ml) (15 milliliters)
- Fresh parsley, chopped, 2 tablespoons (30 ml) (8 grams)
- Salt, 1/2 teaspoon (3 ml) (2.5 grams)
- Black pepper, 1/4 teaspoon (1 ml) (1.25 grams)
- Olive oil, 2 tablespoons (30 ml) (30 milliliters)
- Tomato sauce, 2 cups (480 ml) (480 milliliters)
- Heavy cream, 1/2 cup (120 ml) (120 milliliters)
- Butter, 2 tablespoons (30 ml) (28 grams)
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the jumbo pasta shells according to the package instructions until al dente. Drain and set aside.
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add minced garlic to the skillet and sauté for 1 minute until fragrant.
- Add lobster meat to the skillet and cook for 3-4 minutes until opaque. Remove from heat.
- In a large bowl, combine lobster meat, ricotta cheese, 1/2 cup mozzarella cheese, lemon juice, fresh parsley, salt, and black pepper. Mix well.
- Carefully stuff each cooked pasta shell with the lobster and ricotta mixture. Set aside.
- In a saucepan, heat 1 tablespoon of olive oil over medium heat.
- Add butter to the saucepan and let it melt.
- Pour in the tomato sauce and heavy cream, stirring to combine.
- Simmer the sauce for 5 minutes until slightly thickened.
- Spread a thin layer of sauce on the bottom of a baking dish.
- Arrange the stuffed shells in the baking dish.
- Pour the remaining sauce over the stuffed shells.
- Sprinkle the remaining 1/2 cup mozzarella cheese and Parmesan cheese over the top.
- Cover the baking dish with aluminum foil.
- Bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Let the dish rest for a few minutes before serving.
