Ingredients

  • 450g spaghetti (1 lb)
  • 2 lobsters, about 680g (1.5 lb) each
  • 4 tablespoons (56g) unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon (5g) red pepper flakes
  • 1 lemon, juiced
  • 1/4 cup (15g) fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the spaghetti to the boiling water and cook until al dente, according to package instructions.
  3. Drain the spaghetti, reserving 1 cup of the pasta cooking water.
  4. Bring another large pot of water to a boil.
  5. Add the lobsters to the boiling water and cook for 8-10 minutes, or until bright red.
  6. Remove the lobsters and let them cool slightly.
  7. Crack the lobster shells and extract the meat from the claws and tails.
  8. Cut the lobster meat into bite-sized pieces.
  9. In a large skillet, melt the butter over medium heat.
  10. Add the minced garlic and red pepper flakes to the skillet.
  11. Sauté the garlic and red pepper flakes for about 1 minute, until fragrant.
  12. Add the lobster meat to the skillet and cook for 2-3 minutes, stirring occasionally.
  13. Add the cooked spaghetti to the skillet and toss to combine with the lobster and garlic butter.
  14. If needed, add some reserved pasta water to loosen the sauce.
  15. Add lemon juice and chopped parsley to the skillet and toss again.
  16. Season with salt and black pepper to taste.
  17. Serve immediately.

  • Consider using seafood stock instead of water for a more flavorful broth when boiling the lobsters.
