Ingredients
- 450g spaghetti (1 lb)
- 2 lobsters, about 680g (1.5 lb) each
- 4 tablespoons (56g) unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon (5g) red pepper flakes
- 1 lemon, juiced
- 1/4 cup (15g) fresh parsley, chopped
- Salt, to taste
- Black pepper, to taste
Instructions
- Bring a large pot of salted water to a boil.
- Add the spaghetti to the boiling water and cook until al dente, according to package instructions.
- Drain the spaghetti, reserving 1 cup of the pasta cooking water.
- Bring another large pot of water to a boil.
- Add the lobsters to the boiling water and cook for 8-10 minutes, or until bright red.
- Remove the lobsters and let them cool slightly.
- Crack the lobster shells and extract the meat from the claws and tails.
- Cut the lobster meat into bite-sized pieces.
- In a large skillet, melt the butter over medium heat.
- Add the minced garlic and red pepper flakes to the skillet.
- Sauté the garlic and red pepper flakes for about 1 minute, until fragrant.
- Add the lobster meat to the skillet and cook for 2-3 minutes, stirring occasionally.
- Add the cooked spaghetti to the skillet and toss to combine with the lobster and garlic butter.
- If needed, add some reserved pasta water to loosen the sauce.
- Add lemon juice and chopped parsley to the skillet and toss again.
- Season with salt and black pepper to taste.
- Serve immediately.
