Description

Delightful homemade lobster ravioli stuffed with tender lobster meat and drizzled with a light lemon butter sauce.


Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1 cup cooked lobster meat, chopped
  • 1/4 cup grated Parmesan cheese
  • Zest and juice of 1 lemon
  • 2 tablespoons unsalted butter
  • Fresh herbs (basil or parsley) for garnish


Instructions

  1. Combine flour and salt in a bowl; make a well in the center.
  2. Crack the eggs into the well; mix until combined, then knead for about 8 minutes until smooth.
  3. In another bowl, mix lobster meat, Parmesan cheese, lemon zest, salt, and pepper for the filling.
  4. Roll out the dough thinly; place small mounds of filling on one sheet.
  5. Moisten edges with water; cover with another sheet of dough and cut into squares.
  6. Boil salted water; cook ravioli until they float (about 3–4 minutes).
  7. In a skillet, melt butter over medium heat; add lemon juice and zest, then toss in ravioli to coat.

Notes

For an extra layer of flavor, consider adding minced garlic or red pepper flakes to the butter sauce. You can also experiment with different fillings such as ricotta or shrimp.
