Description

Ingredients

  • 1 cup cooked lobster meat (fresh or thawed)
  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 cup ricotta cheese
  • 4 cloves garlic, minced
  • ½ cup unsalted butter
  • Fresh parsley or basil for garnish


Instructions

  1. Prepare the pasta dough by mixing the flour and eggs until a smooth ball forms.
  2. Knead the dough for 8–10 minutes and let it rest for 30 minutes.
  3. While the dough rests, mix cooked lobster, ricotta, salt, and pepper for the filling.
  4. Once the dough has rested, roll it out thinly on a floured surface. Cut the dough into rectangles.
  5. Fill each rectangle with the lobster mixture and seal the edges tightly.
  6. Bring a pot of salted water to a boil and add the ravioli. Cook for 3–5 minutes until they float.
  7. For the sauce, melt the butter in a pan and sauté the minced garlic until fragrant.
