Ingredients
- 1 cup cooked lobster meat (fresh or thawed)
- 2 cups all-purpose flour
- 3 large eggs
- 1 cup ricotta cheese
- 4 cloves garlic, minced
- ½ cup unsalted butter
- Fresh parsley or basil for garnish
Instructions
- Prepare the pasta dough by mixing the flour and eggs until a smooth ball forms.
- Knead the dough for 8–10 minutes and let it rest for 30 minutes.
- While the dough rests, mix cooked lobster, ricotta, salt, and pepper for the filling.
- Once the dough has rested, roll it out thinly on a floured surface. Cut the dough into rectangles.
- Fill each rectangle with the lobster mixture and seal the edges tightly.
- Bring a pot of salted water to a boil and add the ravioli. Cook for 3–5 minutes until they float.
- For the sauce, melt the butter in a pan and sauté the minced garlic until fragrant.
- Toss the cooked ravioli in the garlic butter sauce before serving.
