  • Black pepper, ground, 1/4 teaspoon (1 ml) (about 1 gram)
  • Fresh parsley, chopped, 2 tablespoons (30 ml) (about 8 grams)
  • Wonton wrappers, about 24 pieces
  • For the cream sauce:
  • Coconut cream, 1 cup (240 ml) (240 milliliters)
  • Vegetable oil, 2 tablespoons (30 ml) (about 28 grams)
  • Garlic, minced, 2 cloves
  • Plant-based cheese, grated, 1/4 cup (60 ml) (about 25 grams)
  • Salt, 1/2 teaspoon (3 ml) (about 3 grams)
  • Black pepper, ground, 1/4 teaspoon (1 ml) (about 1 gram)
  • Fresh basil, chopped, 2 tablespoons (30 ml) (about 8 grams)


Instructions

  1. In a bowl, combine cooked lobster meat, ricotta cheese, Parmesan cheese, salt, black pepper, and chopped parsley.
  2. Mix the filling ingredients until well combined and set aside.
  3. Lay out wonton wrappers on a clean surface.
  4. Place about 1 teaspoon of the lobster filling in the center of each wonton wrapper.
  5. Brush the edges of the wonton wrappers with a little water.
  6. Fold each wrapper over the filling to form a triangle, pressing the edges to seal.
  7. In a large pot, bring salted water to a gentle boil.
  8. Add the ravioli to the boiling water and cook for about 3-4 minutes or until they float.
  9. Remove the ravioli with a slotted spoon and set aside.
  10. In a saucepan, melt the butter over medium heat.
