- Plant-based cheese, grated, 1/4 cup (60 ml) (about 25 grams)
- Salt, 1/2 teaspoon (3 ml) (about 3 grams)
- Black pepper, ground, 1/4 teaspoon (1 ml) (about 1 gram)
- Fresh basil, chopped, 2 tablespoons (30 ml) (about 8 grams)
Instructions
- In a bowl, combine cooked lobster meat, ricotta cheese, Parmesan cheese, salt, black pepper, and chopped parsley.
- Mix the filling ingredients until well combined and set aside.
- Lay out wonton wrappers on a clean surface.
- Place about 1 teaspoon of the lobster filling in the center of each wonton wrapper.
- Brush the edges of the wonton wrappers with a little water.
- Fold each wrapper over the filling to form a triangle, pressing the edges to seal.
- In a large pot, bring salted water to a gentle boil.
- Add the ravioli to the boiling water and cook for about 3-4 minutes or until they float.
- Remove the ravioli with a slotted spoon and set aside.
- In a saucepan, melt the butter over medium heat.
- Add minced garlic to the melted butter and sauté until fragrant.
- Pour in the heavy cream and bring to a gentle simmer.
- Stir in grated Parmesan cheese, salt, and black pepper.
- Cook the sauce for about 2-3 minutes, stirring frequently, until slightly thickened.
- Add chopped fresh basil to the cream sauce and stir well.
- Gently add the cooked ravioli to the cream sauce, coating them evenly.
