Ingredients
- 2 quarts (1893 ml) water
- 2 tablespoons (30 ml) salt
- 1 (2 pound (907 g)) lobster
- 2 pounds (907 g) russet potatoes, peeled and cut into 2-inch pieces
- 4 cups (946 ml) water, or more as needed
- 1 teaspoon (5 ml) salt
- 1/4 cup (60 ml) vegetable oil
- 1/2 cup (120 ml) coconut cream, or more as needed
- 1/4 teaspoon (1 ml) paprika
Instructions
- Set your oven to warm at 200 degrees F (95 degrees C).
- Prepare the lobster: Mix the water with salt in a big pot and heat until it boils. Carefully place the lobster into the bubbling water, cover the pot, and let it come back to a boil. Turn the heat down to medium-low and let it simmer until the lobster is bright red, around 10 minutes. Take the lobster out of the water and let it cool.
- Once the lobster is cool enough, clean it and extract the meat from the tail, keeping the shell aside. Break open the claws and take out the meat. Cut the tail meat into rough pieces and place it with the whole claw meat in a covered dish, keeping it warm in the oven.
- Prepare the potatoes: Put the potatoes in a large pot and add enough water to cover them by about an inch. Add salt and bring to a boil. Place the lobster tail shell on top of the potatoes, then lower the heat to medium-low, cover, and let them simmer until a fork easily goes through the potatoes, about 20 to 30 minutes.
- Take out the lobster shell and throw it away. Drain the water from the pot. Lower the heat and gently move the pot over the heat to dry the potatoes. Mash the potatoes with vegetable oil until smooth. Stir in the coconut cream until you reach the desired texture.
- Mix the warm lobster meat into the mashed potatoes. Dust with paprika when serving.
