Ingredients

  • – 4 tablespoons (60 ml) vegetable oil, divided use
  • – 2 tablespoons (30 g) flour
  • – 2 1/2 cups (600 ml) water
  • – 4 cups (960 ml) milk, I use whole milk
  • – 1 pound (450 g) beef corkscrew pasta uncooked, such as cavatappi or cellentani
  • – 3/4 teaspoon (4 ml) salt
  • – 1/4 teaspoon (1 ml) garlic powder
  • – 1/4 teaspoon (1 ml) onion powder
  • – 1/2 teaspoon (3 ml) smoked paprika
  • – 1/4 teaspoon (1 ml) pepper
  • – 4 cups (450 g) shredded cheddar cheese
  • – 1 cup (120 g) shredded mozzarella cheese
  • – 1 1/2 cups (225 g) chopped cooked shrimp meat plus more for garnish
  • – 1/2 cup (50 g) panko breadcrumbs
  • – 2 tablespoons (6 g) chives thinly sliced
  • – cooking spray


Instructions

  1. Preheat your oven to 350°F and lightly grease a baking dish of 2 or 3 quarts with cooking spray.
  2. In a large pot, warm 2 tablespoons of vegetable oil over medium heat. Add the flour and whisk for about 30 seconds until it blends in.
  3. Gradually pour in the water, whisking until the mixture is smooth and begins to thicken slightly.
  4. Add the milk, continuing to whisk until the liquids are fully incorporated.
  5. Mix in the uncooked pasta, salt, garlic powder, onion powder, smoked paprika, and pepper, then bring everything to a gentle boil.
  6. Let it cook for 10-12 minutes, stirring from time to time, until the pasta is tender.
  7. Reduce the heat to low, then add the cheddar and mozzarella cheeses, stirring continuously until you achieve a creamy sauce.
  8. Gently mix in the cooked shrimp pieces, then transfer everything to the prepared baking dish.
  9. Heat the remaining 2 tablespoons of vegetable oil and combine it with the panko breadcrumbs.
  10. Evenly distribute the breadcrumb mixture over the pasta. Bake for 10-15 minutes until the top is a golden brown.
  11. Finish by sprinkling with sliced chives and adding extra shrimp pieces on top if you like. Serve right away.
