Ingredients
- 1 lb lobster meat
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 4 cups seafood stock
- 1 cup heavy cream
- 1/2 cup onion, chopped
- 1/4 cup celery, chopped
- 1/4 cup carrot, chopped
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Melt butter in a large pot over medium heat.
- Add the chopped onion, celery, and carrot, cooking until softened.
- Stir in flour and cook for 2 minutes to create a roux.
- Gradually add seafood stock while whisking until smooth.
- Bring the mixture to a simmer and cook for 10 minutes.
