Ingredients
- 16 ounces fettuccine pasta (or your choice of pasta)
- ½ cup onion (diced)
- 2 cloves garlic (minced)
- 1 teaspoon lemon zest
- 1 teaspoon lemon juice
- 12 ounces langostino lobster (thawed)
- 1 pint cherry tomatoes (halved, optional)
- 16 ounces lobster bisque (Trader Joe’s or other variety)
- ½ cup + more for serving Parmesan cheese (grated)
- 2 tablespoons Italian parsley (chopped, optional)
- 2 tablespoons olive oil
Instructions
- In a large pot of boiling water, cook the fettuccine to al dente according to package instructions. Drain and set aside.
- In a large skillet over medium heat, add olive oil.
- Add the diced onion and minced garlic to the skillet. Cook for 2-3 minutes until they become tender and fragrant.
- If using cherry tomatoes, add them to the skillet and cook for an additional 2 minutes until they soften.
- Stir in the thawed langostino lobster, cooking until heated through.
- Pour in the lobster bisque, stirring to combine.
- Add the lemon zest and lemon juice, seasoning with salt and pepper to taste.
- Sprinkle in the grated Parmesan cheese, stirring until melted into the sauce.
- Gently toss the cooked fettuccine into the skillet, ensuring the pasta is well-coated with the luxurious sauce.
- Garnish with additional Parmesan cheese and chopped Italian parsley or basil, if desired.
- Serve right away and savor the flavors of seafood bliss.
