Ingredients
- 2 cup (480 ml) s cooked lobster meat, chopped (about 300 grams)
- 8 ounce (227 g) s elbow macaroni (about 225 grams)
- 2 tablespoon (30 ml) s unsalted butter (about 28 grams)
- 2 tablespoon (30 ml) s all-purpose flour (about 16 grams)
- 1 cup (240 ml) whole milk (about 240 milliliters)
- 1 cup (240 ml) heavy cream (about 240 milliliters)
- 1 cup (240 ml) shredded cheddar cheese (about 100 grams)
- 1/2 cup (120 ml) grated Parmesan cheese (about 50 grams)
- 1/2 teaspoon (3 ml) garlic powder (about 1.5 grams)
- 1/2 teaspoon (3 ml) onion powder (about 1.5 grams)
- Salt, to taste
- Black pepper, to taste
- 20 egg roll wrappers
- Vegetable oil, for frying (amount as needed)
Instructions
- Cook the elbow macaroni in a pot of salted boiling water until al dente, then drain and set aside.
- In a large saucepan, melt the butter over medium heat.
- Add the flour to the melted butter and whisk continuously for 1-2 minutes to form a roux.
- Gradually whisk in the whole milk and heavy cream, stirring until the mixture is smooth.
- Bring the mixture to a simmer, allowing it to thicken slightly.
- Stir in the cheddar cheese and Parmesan cheese until fully melted and incorporated.
- Add the garlic powder, onion powder, salt, and black pepper to the cheese sauce, adjusting seasoning to taste.
- Stir the cooked macaroni and chopped lobster meat into the cheese sauce until well combined.
- Allow the lobster mac and cheese mixture to cool slightly before handling.
- Lay an egg roll wrapper on a clean surface with one corner pointing toward you.
- Spoon about 2 tablespoons of the lobster mac and cheese mixture onto the center of the wrapper.
- Fold the bottom corner of the wrapper over the filling, then fold in the side corners.
- Roll the wrapper tightly, sealing the top corner with a little water.
- Repeat with the remaining wrappers and filling.
- Heat vegetable oil in a deep pan or fryer to 350°F (about 175°C).
- Fry the egg roll bites in batches, turning occasionally, until golden brown and crispy, about 3-4 minutes.
- Remove the egg roll bites from the oil and drain on paper towels.
