Ingredients
- 1 pound cooked shrimp, peeled and deveined
- 1 cup crab meat
- 1 cup scallops, cooked and chopped
- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Prepare all seafood, ensuring shrimp, crab, and scallops are cooked and chilled.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and parsley.
- In a separate small bowl, mix the mayonnaise with lemon juice. Season with salt and pepper to taste.
- Gently fold the seafood into the vegetable mixture.
