Ingredients
- 1 cup (240 ml) water
- 1 cup (240 ml) milk
- 1 cup (160 g) grits
- 2 tablespoon s (28 g) unsalted butter
- 1 cup (115 g) shredded cheddar cheese
- 1 pound (450 g) shrimp, peeled and deveined
- 1 tablespoon (6 g) Cajun seasoning
- 1 tablespoon (15 ml) olive oil
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup (240 ml) chicken broth
- 1 cup (150 g) diced tomatoes
- 1/4 cup (60 ml) heavy cream
- Salt, to taste
- Black pepper, to taste
- 2 tablespoon s (7 g) chopped fresh parsley
Instructions
- In a medium saucepan, bring water and milk to a boil over medium heat.
- Gradually whisk in the grits and reduce the heat to low.
- Cook the grits, stirring frequently, for about 15-20 minutes until thickened.
- Stir in the butter and cheddar cheese until melted and smooth.
- Season the grits with salt and black pepper to taste, then set aside and keep warm.
- In a large skillet, heat olive oil over medium-high heat.
- Add the shrimp and sprinkle with Cajun seasoning.
- Cook the shrimp for 2-3 minutes per side until pink and cooked through.
- Remove the shrimp from the skillet and set aside.
- In the same skillet, add chopped onion, green bell pepper, and red bell pepper.
- Sauté the vegetables for 5 minutes until softened.
- Add the minced garlic and cook for an additional 1 minute.
- Pour in the chicken broth and diced tomatoes, stirring to combine.
- Bring the mixture to a simmer and cook for 5 minutes.
- Stir in the heavy cream and cook for another 2 minutes.
- Return the shrimp to the skillet and stir to coat in the sauce.
- Season the mixture with salt and black pepper to taste.
- Serve the shrimp and vegetable mixture over the prepared grits.
- Garnish with chopped fresh parsley before serving.
