Ingredients

  • 2 halibut fillets
  • 2 tablespoons olive oil (30 ml)
  • 2 tablespoons lemon juice (30 ml)
  • 1 teaspoon lemon zest (2 g)
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme (1 g)
  • 1 teaspoon dried rosemary (1 g)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon chopped fresh parsley for garnish (4 g)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, combine olive oil, lemon juice, lemon zest, minced garlic, thyme, and rosemary.
  3. Season the halibut fillets with salt and black pepper on both sides.
  4. Place the halibut fillets in a baking dish.
  5. Pour the lemon herb mixture evenly over the fillets.
  6. Bake in the preheated oven for 10-15 minutes, or until the fish flakes easily with a fork.
  7. Remove the baking dish from the oven and let the fish rest for 2 minutes.
  8. Sprinkle chopped fresh parsley over the fillets for garnish.
  9. Serve immediately.

Notes

  • Marinate halibut fillets in lemon herb mixture for 30 minutes before baking for a more pronounced citrus flavor.
  • Rub dried thyme and rosemary onto fillets before seasoning with salt and pepper to enhance herb flavors.
  • Pat dry halibut fillets with paper towels before seasoning for a crispier skin when baking; squeeze extra lemon juice before serving for added freshness.
