A delightful dish featuring halibut seared to perfection and basted with a rich lemon herb butter, evoking memories of coastal family gatherings.
Ingredients
- 2 pieces halibut fillets (6–8 oz each)
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 2 cloves garlic, finely minced
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbsp fresh parsley, finely chopped
- 1 tsp fresh thyme (or 1/2 tsp dried)
- Optional: pinch of paprika or white pepper
Instructions
- Pat the halibut fillets dry to remove any residual moisture. This promotes better browning.
- Season both sides of each fillet generously with salt and black pepper.
- Heat the olive oil in a large skillet over medium-high heat. Once hot, add the halibut fillets carefully, cooking for about 3-4 minutes until golden brown.
- Flip the fillets over and add the unsalted butter to the skillet. Let it melt and foam while basting the fillets with the melted butter using a spoon.
- Add minced garlic to the pan and sauté it briefly until fragrant—about 30 seconds.
- Stir in the lemon juice, lemon zest, and thyme. Continue basting the fish until it reaches an internal temperature of 130°F (approximately 2-3 more minutes).
- Remove the skillet from heat and sprinkle with fresh parsley.
- Serve hot with a drizzle of the pan sauce over the halibut fillets.
Notes
For optimal results, use fresh halibut and ensure it’s dry before cooking for the best sear.
