A delightful pasta dish featuring tender shrimp, fragrant garlic, fresh spinach, and zesty lemon, perfect for any occasion.
Ingredients
- 1 pound of thawed shrimp, tails removed
- 1 tablespoon of olive oil
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of chili flakes
- Salt and pepper to taste
- Approximately 5 ounces of dry pasta (around 140 grams)
- 3 tablespoons of olive oil (divided)
- 5 cloves of minced garlic
- 4 cups of spinach
- Juice and zest of half a lemon
- 1/4 cup of fresh basil or parsley, chopped
- Optional: Fresh parmesan for serving
Instructions
- Pat the shrimp dry with a paper towel and toss with 1 tablespoon of olive oil, smoked paprika, chili flakes, salt, and pepper.
- Heat a large pan over medium-high heat and cook the shrimp for 1-2 minutes on each side until opaque. Remove and set aside.
- Add 1 tablespoon of olive oil to the pan and sauté minced garlic for 2-3 minutes until golden.
- Add spinach to the pan and cook until wilted, about 1-2 minutes.
- Turn off the heat and add drained pasta, lemon zest, lemon juice, remaining olive oil, and cooked shrimp to the pan. Toss to combine.
- Serve hot, garnished with freshly grated parmesan if desired.
Notes
For a richer flavor, consider mixing olive oil with a touch of butter when sautéing. Pair with a crisp side salad or garlic bread for a complete meal.
