Description

A delightful pasta dish featuring tender shrimp, fragrant garlic, fresh spinach, and zesty lemon, perfect for any occasion.


Ingredients

  • 1 pound of thawed shrimp, tails removed
  • 1 tablespoon of olive oil
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of chili flakes
  • Salt and pepper to taste
  • Approximately 5 ounces of dry pasta (around 140 grams)
  • 3 tablespoons of olive oil (divided)
  • 5 cloves of minced garlic
  • 4 cups of spinach
  • Juice and zest of half a lemon
  • 1/4 cup of fresh basil or parsley, chopped
  • Optional: Fresh parmesan for serving


Instructions

  1. Pat the shrimp dry with a paper towel and toss with 1 tablespoon of olive oil, smoked paprika, chili flakes, salt, and pepper.
  2. Heat a large pan over medium-high heat and cook the shrimp for 1-2 minutes on each side until opaque. Remove and set aside.
  3. Add 1 tablespoon of olive oil to the pan and sauté minced garlic for 2-3 minutes until golden.
  4. Add spinach to the pan and cook until wilted, about 1-2 minutes.
  5. Turn off the heat and add drained pasta, lemon zest, lemon juice, remaining olive oil, and cooked shrimp to the pan. Toss to combine.
  6. Serve hot, garnished with freshly grated parmesan if desired.

Notes

For a richer flavor, consider mixing olive oil with a touch of butter when sautéing. Pair with a crisp side salad or garlic bread for a complete meal.
