Ingredients

  • 2 tablespoons (30 ml) vegetable oil
  • 4 cloves garlic – minced
  • 1 lemon – juiced and zested
  • 1/2 tablespoon (8 ml) honey
  • 1/4 teaspoon (1 ml) salt
  • 3/8 teaspoon (2 ml) pepper
  • 1 lb (450 g) shrimp – peeled and deveined
  • 1/2 tablespoon (8 ml) olive oil
  • 1 shallot – finely chopped
  • 2 cups (400 g) rice-shaped pasta
  • 1/2 cup (120 ml) vegetable broth or water
  • 3 – 4 cups (720960 ml) broth or water
  • 1 cup (150 g) frozen peas
  • Parsley – chopped to garnish


Instructions

  1. Prepare the marinade by combining the vegetable oil, minced garlic, lemon juice and zest, honey, salt, and pepper in a jar; set aside.
  2. Dry the shrimp using a paper towel and coat them with a tablespoon of the marinade. Reserve the rest of the marinade for later use.
  3. In a large skillet heated over medium flame, cook the shrimp for about 2 minutes per side until they become fully opaque. Move the shrimp to a different plate and keep them aside.
  4. Add olive oil to the same skillet, followed by the chopped shallots. Cook until they release their aroma, roughly 2 – 3 minutes. Pour in the reserved marinade and let it simmer briefly, about 1 – 2 minutes. Mix in the rice-shaped pasta and let it toast for another 1 – 2 minutes to absorb the flavors. Gradually add the vegetable broth or water in increments, stirring occasionally, until the pasta reaches the desired consistency, around 10 minutes. Add the frozen peas with the last portion of broth or water.
  5. Once the pasta is finished, take the skillet off the heat and return the cooked shrimp to the mixture. Stir everything together and serve warm, garnished with chopped parsley.

Notes

  • Thoroughly pat dry shrimp before cooking for a better sear and to avoid sogginess.
  • Toast orzo in skillet before adding liquid to enhance flavor and prevent mushiness.
  • Add bell peppers or cherry tomatoes for color and nutrition, and drizzle with extra lemon juice before serving for freshness.
