Ingredients

  • 2 sea bass fillets
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon (juice and zest)
  • Salt and pepper, to taste
  • 4 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Season the sea bass fillets with salt, pepper, lemon juice, and zest. Place them in the skillet and cook for 3-4 minutes on each side.
  4. In another saucepan, add the fresh spinach and sauté until wilted. Stir in heavy cream and Parmesan cheese, cooking until smooth.
  5. Serve the sea bass on a bed of creamy spinach.

Notes

For added texture, finish the fish under the broiler for two minutes after pan-searing, ensuring not to overcook it.
