Ingredients

  • 1 pound (454 g) sea scallops (about 450 grams)
  • 1 cup (240 ml) orzo pasta (about 200 grams)
  • 2 tablespoons olive oil (30 mL)
  • 2 tablespoons (30 ml) vegetable oil (28 grams)
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1/2 teaspoon (3 ml) salt (2.5 grams)
  • 1/4 teaspoon (1 ml) black pepper (1.25 grams)
  • 2 cups chicken broth (480 mL)
  • 1/4 cup (60 ml) grated Parmesan cheese (25 grams)
  • 2 tablespoons (30 ml) chopped fresh parsley (8 grams)
  • 1/2 cup (120 ml) cherry tomatoes, halved (about 75 grams)
  • 1/4 teaspoon (1 ml) red pepper flakes (optional) (0.5 grams)


Instructions

  1. Rinse the sea scallops under cold water and pat them dry with paper towels.
  2. Season the scallops with salt and black pepper on both sides.
  3. Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  4. Add the scallops to the skillet in a single layer, cooking for about 2-3 minutes on each side until golden brown and opaque; remove and set aside.
  5. In the same skillet, add the remaining tablespoon of olive oil and butter.
  6. Add the minced garlic and cook for 1 minute until fragrant.
  7. Stir in the orzo pasta and cook for 2 minutes until lightly toasted.
  8. Pour in the chicken broth and bring to a boil.
  9. Reduce the heat to low, cover, and simmer for 8-10 minutes until the orzo is tender and most of the liquid is absorbed.
  10. Stir in the lemon juice, lemon zest, and red pepper flakes (if using).
  11. Mix in the grated Parmesan cheese, cherry tomatoes, and half of the chopped parsley.
  12. Return the scallops to the skillet, gently tossing to combine with the orzo.
  13. Cook for an additional 2 minutes to heat the scallops through.
  14. Garnish with the remaining parsley before serving.
