Ingredients
- 1 pound (454 g) sea scallops (about 450 grams)
- 1 cup (240 ml) orzo pasta (about 200 grams)
- 2 tablespoons olive oil (30 mL)
- 2 tablespoons (30 ml) vegetable oil (28 grams)
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- 1/2 teaspoon (3 ml) salt (2.5 grams)
- 1/4 teaspoon (1 ml) black pepper (1.25 grams)
- 2 cups chicken broth (480 mL)
- 1/4 cup (60 ml) grated Parmesan cheese (25 grams)
- 2 tablespoons (30 ml) chopped fresh parsley (8 grams)
- 1/2 cup (120 ml) cherry tomatoes, halved (about 75 grams)
- 1/4 teaspoon (1 ml) red pepper flakes (optional) (0.5 grams)
Instructions
- Rinse the sea scallops under cold water and pat them dry with paper towels.
- Season the scallops with salt and black pepper on both sides.
- Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
- Add the scallops to the skillet in a single layer, cooking for about 2-3 minutes on each side until golden brown and opaque; remove and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and butter.
- Add the minced garlic and cook for 1 minute until fragrant.
- Stir in the orzo pasta and cook for 2 minutes until lightly toasted.
- Pour in the chicken broth and bring to a boil.
- Reduce the heat to low, cover, and simmer for 8-10 minutes until the orzo is tender and most of the liquid is absorbed.
- Stir in the lemon juice, lemon zest, and red pepper flakes (if using).
- Mix in the grated Parmesan cheese, cherry tomatoes, and half of the chopped parsley.
- Return the scallops to the skillet, gently tossing to combine with the orzo.
- Cook for an additional 2 minutes to heat the scallops through.
- Garnish with the remaining parsley before serving.
