Description

A quick and delicious pasta dish featuring vibrant garlic and zesty lemon, perfect for busy weeknights.


Ingredients

  • 13.5 oz package spaghetti
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons chopped fresh garlic
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon pepper
  • 3/4 cup whipping cream
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup parmesan cheese
  • Basil and fresh parsley for garnish (if desired)
  • Pasta water (add as needed)


Instructions

  1. Boil a large pot of salted water until it reaches a rolling boil.
  2. Add the spaghetti and cook according to package instructions until just al dente. Save a half cup of the pasta water.
  3. While the pasta cooks, finely chop the garlic and place it in a large skillet over low heat.
  4. Add the olive oil, being careful not to brown the garlic.
  5. Incorporate red pepper flakes and black pepper, sautéing for about 10 minutes.
  6. Once fragrant, add lemon zest and whipping cream, stirring until the sauce thickens.
  7. Once pasta is cooked, remove heat and gently stir in fresh lemon juice.
  8. Transfer spaghetti to the skillet with the sauce and toss well. Add reserved pasta water until desired consistency is achieved.
  9. Top with parmesan cheese, mixing until the cheese melts and coats the pasta.
  10. Serve immediately, garnished with fresh parsley and chopped basil, if desired.

Notes

For leftovers, store in an airtight container in the fridge. Reheat gently and add a splash of cream or pasta water to revive the sauce.
