A quick and delicious pasta dish featuring vibrant garlic and zesty lemon, perfect for busy weeknights.
Ingredients
- 13.5 oz package spaghetti
- 1/4 cup extra virgin olive oil
- 3 tablespoons chopped fresh garlic
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon pepper
- 3/4 cup whipping cream
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 cup parmesan cheese
- Basil and fresh parsley for garnish (if desired)
- Pasta water (add as needed)
Instructions
- Boil a large pot of salted water until it reaches a rolling boil.
- Add the spaghetti and cook according to package instructions until just al dente. Save a half cup of the pasta water.
- While the pasta cooks, finely chop the garlic and place it in a large skillet over low heat.
- Add the olive oil, being careful not to brown the garlic.
- Incorporate red pepper flakes and black pepper, sautéing for about 10 minutes.
- Once fragrant, add lemon zest and whipping cream, stirring until the sauce thickens.
- Once pasta is cooked, remove heat and gently stir in fresh lemon juice.
- Transfer spaghetti to the skillet with the sauce and toss well. Add reserved pasta water until desired consistency is achieved.
- Top with parmesan cheese, mixing until the cheese melts and coats the pasta.
- Serve immediately, garnished with fresh parsley and chopped basil, if desired.
Notes
For leftovers, store in an airtight container in the fridge. Reheat gently and add a splash of cream or pasta water to revive the sauce.
