Ingredients
- 4 cod fillets (6 oz each)
- 3 tbsp unsalted butter
- 1 tbsp olive oil
- 4 cloves garlic (minced)
- 3 tbsp freshly squeezed lemon juice
- Zest of 1 lemon
- Salt and pepper (to taste)
- 2 tbsp fresh parsley (chopped)
Instructions
- Pat the cod fillets dry and season both sides with salt and pepper.
- In a large skillet over medium heat, melt butter and olive oil.
- Add the minced garlic and sauté until fragrant.
- Place the cod fillets skin-side down in the skillet and cook for 4-5 minutes until the skin is golden brown.
- Gently flip the fillets and add lemon juice, cooking for an additional 3-4 minutes until the fish flakes easily.
- Remove from heat and garnish with parsley and lemon zest before serving.
