  • 4 cod fillets
  • 2 tablespoons vegetable oil (30ml)

  • 1 lemon, juiced and zested
  • 1 teaspoon (5 ml) smoked paprika
  • Salt and pepper, to taste
  • 1 pound (454 g) Brussels sprouts, halved
  • 1 cup (240 ml) cooked quinoa or rice
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Set your oven to 400°F (200°C) and let it preheat.
  2. Combine the Brussels sprouts with half of the vegetable oil, seasoning them with salt and pepper. Arrange them on a baking tray and roast until they are tender and golden, approximately 20-25 minutes.
  3. While the Brussels sprouts are cooking, use paper towels to dry the cod fillets.
  4. In a small mixing bowl, combine the remaining vegetable oil, minced garlic, lemon juice, lemon zest, smoked paprika, salt, and pepper.
