Ingredients
- 4 cod fillets
- 2 tablespoons vegetable oil (30ml)

- 1 lemon, juiced and zested
- 1 teaspoon (5 ml) smoked paprika

- 1 pound (454 g) Brussels sprouts, halved
- 1 cup (240 ml) cooked quinoa or rice
- Fresh parsley, chopped (for garnish)
Instructions
- Set your oven to 400°F (200°C) and let it preheat.
- Combine the Brussels sprouts with half of the vegetable oil, seasoning them with salt and pepper. Arrange them on a baking tray and roast until they are tender and golden, approximately 20-25 minutes.
- While the Brussels sprouts are cooking, use paper towels to dry the cod fillets.
- In a small mixing bowl, combine the remaining vegetable oil, minced garlic, lemon juice, lemon zest, smoked paprika, salt, and pepper.
- Generously apply this mixture onto the cod fillets using a brush.
- Place a skillet on medium-high heat and cook the cod fillets for 2-3 minutes on each side until they achieve a golden-brown color and are fully cooked.
- Prepare the bowls by placing a layer of cooked quinoa or rice at the bottom. Arrange the roasted Brussels sprouts and cod fillets on top.
- Sprinkle freshly chopped parsley over the dish and add more lemon zest if you like. Serve while warm.
