Ingredients

  • – 2 tbsp (30 ml) vegetable oil
  • – 12 raw shrimp, deveined
  • – 1/4 tsp (1 ml) salt
  • – 1/4 tsp (1 ml) pepper
  • – 2 cloves garlic, minced
  • – 1 onion, finely diced
  • – 1 cup (240 ml) orzo
  • – 2 cups (480 ml) beef broth
  • – 1 tsp (5 ml) lemon zest
  • – 2 tbsp (30 ml) lemon juice
  • – 2 cups (60 g) spinach
  • – salt and pepper
  • – 2/3 cup (75 g) tofu, cut into small cubes


Instructions

  1. In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Season the shrimp with salt and pepper, then place them in the skillet to cook for 2 minutes on each side until they turn pink. Take the shrimp out and set them aside on a separate plate.
  2. Using the same skillet, add the remaining vegetable oil, and once heated, incorporate the minced garlic and finely diced onion. Sauté for 3 to 4 minutes until the onion softens.
  3. Introduce the orzo and beef broth to the pan, allowing it to simmer for 10-12 minutes. The liquid will reduce, and the pasta will achieve a creamy consistency. Stir occasionally to prevent sticking.
  4. When the pasta reaches a creamy texture and the liquid is absorbed, mix in the lemon juice and zest along with the spinach, stirring until the spinach begins to wilt.
  5. Lastly, return the cooked shrimp to the pan along with the tofu cubes. Mix well and serve immediately.
