A simple and healthy baked cod recipe flavored with lemon and dill, perfect for busy weeknight dinners.
Ingredients
- 4 fillets of cod
- 2 tablespoons of olive oil
- Salt and black pepper, to taste
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika (optional)
- 1 cup of Greek yogurt
- 2 tablespoons of mayonnaise (optional)
- 1 tablespoon of fresh dill
- 2 tablespoons of lemon juice
- 1 teaspoon of lemon zest
- 1 teaspoon of Dijon mustard
Instructions
- Rub the cod fillets with olive oil, coating them evenly.
- Season with salt, black pepper, garlic powder, and paprika if using.
- Place the cod in the prepared baking dish.
- Mix the Greek yogurt, mayonnaise (if using), fresh dill, lemon juice, lemon zest, and Dijon mustard in a bowl.
- Spoon the mixture generously over the cod fillets.
- Bake in the preheated oven for 15 to 20 minutes, or until the fish flakes easily with a fork.
Notes
For best results, do not overcrowd the baking dish and allow the fish to rest a couple of minutes before serving.
