Description

A simple and healthy baked cod recipe flavored with lemon and dill, perfect for busy weeknight dinners.


Ingredients

  • 4 fillets of cod
  • 2 tablespoons of olive oil
  • Salt and black pepper, to taste
  • 1 teaspoon of garlic powder
  • 1 teaspoon of paprika (optional)
  • 1 cup of Greek yogurt
  • 2 tablespoons of mayonnaise (optional)
  • 1 tablespoon of fresh dill
  • 2 tablespoons of lemon juice
  • 1 teaspoon of lemon zest
  • 1 teaspoon of Dijon mustard


Instructions

  1. Rub the cod fillets with olive oil, coating them evenly.
  2. Season with salt, black pepper, garlic powder, and paprika if using.
  3. Place the cod in the prepared baking dish.
  4. Mix the Greek yogurt, mayonnaise (if using), fresh dill, lemon juice, lemon zest, and Dijon mustard in a bowl.
  5. Spoon the mixture generously over the cod fillets.
  6. Bake in the preheated oven for 15 to 20 minutes, or until the fish flakes easily with a fork.

Notes

For best results, do not overcrowd the baking dish and allow the fish to rest a couple of minutes before serving.
