Description

Delicious salmon rolls filled with creamy ricotta, Parmesan, and fresh basil, drizzled with a vibrant lemon sauce.

Ingredients

  • Salmon fillets (skinless, approx. 5 ounces each)
  • Salt
  • Freshly ground black pepper
  • Ricotta cheese
  • Grated Parmesan cheese
  • Fresh basil (finely chopped)
  • Lemon zest
  • Butter
  • Chicken broth
  • Fresh lemon juice
  • Cornstarch slurry

Instructions

  1. Prepare the Salmon Rolls: Lay fillets flat on a clean surface. Season with salt and pepper. In a bowl, combine the ricotta cheese, grated Parmesan, chopped basil, and lemon zest. Spread this mixture evenly across the fillets. Carefully roll each fillet, securing the filling inside.
  2. Bake the Salmon Rolls: Place the rolls seam-side down in a lightly greased baking dish. Bake in the preheated oven until the salmon is cooked through, about 15-20 minutes.
  3. Make the Lemon Sauce: In a saucepan, melt butter over medium heat. Add chicken broth and freshly squeezed lemon juice. Stir to combine. Gradually whisk in the cornstarch slurry to thicken the sauce, cooking until it reaches a silky consistency.
  4. Serve the Salmon Rolls: Carefully plate the baked salmon rolls and drizzle the lemon sauce over the top. Garnish with additional fresh basil if desired. Enjoy the explosion of flavors!

Notes

For best results, allow ricotta to come to room temperature before mixing. You can also marinate the salmon prior to rolling for deeper flavor.
