Ingredients

  • – 6-8 tortillas (150-200g)
  • – 2 tablespoon mayonnaise (30g)
  • – 3 tablespoon sour cream (45g)
  • – Zest from 1/2 lime
  • – 2 teaspoon lime juice (10ml)
  • – 1/4 teaspoon (1 ml) salt
  • – 1/4 teaspoon (1 ml) pepper
  • – 1-2 tablespoon milk (optional) (15-30ml)
  • – 2 tablespoon gochujang (30g)
  • – 2-3 cloves garlic minced
  • – 1 teaspoon (5 ml) ginger grated
  • – 1 teaspoon (5 ml) low-sodium soy sauce
  • – 1 tablespoon honey (15ml)
  • – 1/2 teaspoon (3 ml) toasted sesame oil
  • – ½ tablespoon vegetable oil (I used avocado oil) (7.5ml)
  • – 3/4 teaspoon (4 ml) salt
  • – 1/4 teaspoon (1 ml) pepper
  • – 1 lb raw shrimp peeled, de-veined, and tails removed (450g)
  • – Kimchi
  • – Cucumber thinly sliced
  • – Grated cheese (e.g., cheddar, mozzarella)
  • – Toasted sesame seeds
  • – 1-2 green onion thinly sliced
  • – Lime wedges


Instructions

  1. Prepare the sauce by mixing mayonnaise, sour cream, lime zest, lime juice, ¼ teaspoon salt, and ¼ teaspoon pepper in a small bowl. If necessary, thin out the mixture with a bit of milk until it reaches a drizzling consistency. Adjust the seasoning as needed, then place it in the refrigerator to chill.
  2. In a large bowl, blend together gochujang, minced garlic, grated ginger, soy sauce, honey, sesame oil, vegetable oil, ¾ teaspoon salt, and ¼ teaspoon pepper to make the marinade. Dry the shrimp thoroughly and add them to the marinade, ensuring they’re well-coated. Let them sit in the marinade for a few minutes while you warm the tortillas.
  3. Heat up the tortillas by placing them in a dry pan, on a griddle, or directly over a gas flame until they are soft and flexible, which should take about 30 seconds on each side. Keep them wrapped in foil to maintain their warmth.
  4. In a hot skillet set on medium-high, arrange the shrimp in a single layer. Sauté them for 2-3 minutes, making sure they turn opaque on the sides. Flip them over, cook for another minute, then switch off the heat and let the remaining warmth finish the cooking process.
  5. To put together the tacos, spread the prepared sauce over each tortilla. Add the shrimp and any additional toppings you prefer.
